What’s your food weakness? For me, I could eat Mexican cuisine any day. Cheese is like my favorite thing ever, and add a little protein (whatever floats your boat), guacamole, sour cream, veggies, and beans to that, and I’m happy as a clam. When I started counting my macros, I was worried I would have to cut out all the things I loved (carbs and cheese being some of those). I was pleasantly surprised when I found that many recipes allow you some dairy and healthy carbohydrates.
When I meal prep, I like to have recipes on hand that are easy to make, not super time consuming, but also delicious. I was happy to find The Cozy Cook, because I feel like she just gets me. She has simple, budget friendly recipes on her blog that are often times healthy enough on their own for me to meal prep (although sometimes I have to make some minor modifications to hit my desired macros).
This Turkey Taco Lettuce Wrap recipe is my absolute favorite. I will say that I typically add more veggies (zucchini, broccoli, spinach, etc. are all good choices for additional carbs), and I always use green olives instead of black — just because green olives are my preference. I also choose to use butter lettuce instead of romaine. This is a meal that I could eat every day and never get sick of it. You can whip them up in your weekly meal prep, or if you have a few minutes, this one is a quick meal that you could make the day of. Try them out ASAP and let me know whatchya think.
